Denis Patoux is a family-owned champagne producer who produces great quality champagne where you get an amazing value for money. They are located in Vandières, Champagne, France. The champagne house is mostly run by Mr. and Madame Patoux and their children are starting to take over as time goes. They produce their champagne in their own facilities and the grapes are picked from their own grape fields. This means that everything happens in place which ensures their high-quality champagne. Other than that it also avoids a lot of transport of the grapes which is better for the environment. All of their champagne is aged in-house. Their non-vintage champagnes must be aged for at least 12 months on 'lees'. Their vintage champagnes are aged for much longer, their newest release is their millésime 2016 which has been aging for 6 years. At Denis Patoux they make a mix of lovely non-vintage champagne, where you can find most champagne styles available on the market. Other than that they also have a fantastic selection of vintage champagnes, as time goes we will try to expand our selection from Denis Patoux as we really believe in their product which is of high quality, while still being affordable.
This champagne is a rosé champagne made after the "Saignée" method which means that it is a "bleeded" champagne. This champagne is made with very ripe Pinot Meunier and Pinot Noir (red grapes). Saignée means that the grapes firstly are lightly smashed and after that they rest a bit while the grape juice has contact with the grape skin which gives the red color and rosé taste. And when the grapes has sit a bit, the juice is released and can now flow out slowly, that is why the method is called "saignée", because the grapes are bleeding out the rosé. This is a process which is mostly used in smaller production, and you will see this method being used very rarely in the bigger houses. This method creates a more dark colored champagne. This is a powerful champagne from the 2018 harvest. In rosé champagne you will find the tannics from a red wine while also having the taste of more red fruit and a deeper flavour of champagne, but it will still feel light like a regular champagne. Rosé champagne just has more body. At Denis Patoux they make 2 kinds of rosé champagne (Rosé d'assamblage & Rosé Saignée) we recommend to try both, and find out what you prefer. Both of these champagnes are non-vintage so we recommend to drink now.
